Ingredients
- 4 potatoes
- 2 eggs
- 250g cod crumbs
- Olive oil
- Parsley
How
to prepare potatoes with cod and egg:
Boil the cod for 3
minutes, remove from heat and drain on kitchen paper.
Peel the potatoes and cut them into
medium-sized slices. Fry the potatoes in extra virgin olive oil and season
with a little salt.
Let the potatoes drain on kitchen
paper, so that it absorbs the excess fat.
Put the cod in a bowl, add a
teaspoon of olive oil with which we have fried the potatoes (so that it is
juicy) and mix with a fork.
In an oven source, we incorporate
the potatoes making a bed, on top the cod and finally the eggs
(uncooked). Put a few drops of oil on the eggs and that's it. The
eggs will cook in the oven.
Bake at 180ยบ heat up and down, until
the eggs are done to your liking.
Serve hot, decorating with a little
parsley.
